- Salmon filet
- ½ cup cubed pineapple
- ½ cup cubed mango
- ½ cup diced red onion
- ½ cup sliced fresh strawberries
- ½ cup finely chopped cilantro
- 1 tablespoon pineapple juice / or fresh lime juice
- Salt for seasoning salmon
- 4 cups shredded lettuce
- 1 cup sliced beets
- 1 cup sliced carrots
- ½ thinly sliced red onion
- ¼ cup crushed walnuts
- ¼ cup feta cheese
- Salt and pepper to taste
- ¼ cup olive oil
- ¼ balsamic vinegar
