Wild Sockeye Salmon, Citrus Salsa, and a Caramelized Beet and Carrot Salad

Nothing says summer like fresh sockeye salmon. Top it off with citrus fruit salsa and you have a winning combination. This recipe can be prepped in advance in the morning and put together in less than 30 minutes when you get home from work.

When beets and carrots are caramelized in the oven, they take on a rich new flavor that goes so well with a simple balsamic vinegar and olive oil dressing. You will impress your family and friends with this easy to follow recipe.

Caramelized beets are also a healthy vegetable snack that most kids will love!

Ingredients Salmon:

  • Salmon filet
  • ½ cup cubed pineapple
  • ½ cup cubed mango
  • ½ cup diced red onion
  • ½ cup sliced fresh strawberries
  • ½ cup finely chopped cilantro
  • 1 tablespoon pineapple juice / or fresh lime juice
  • Salt for seasoning salmon

Ingredients Salad:

  • 4 cups shredded lettuce
  • 1 cup sliced beets
  • 1 cup sliced carrots
  • ½ thinly sliced red onion
  • ¼ cup crushed walnuts
  • ¼ cup feta cheese
  • Salt and pepper to taste
  • ¼ cup olive oil
  • ¼ balsamic vinegar
