Risotto “AKA” Italian comfort food is much easier to make than most people think. This is a very simple and fool proof method to make a perfect risotto every time.
I’m using dried porcini mushrooms that I harvested a few weeks back. Most grocery stores have dried wild mushrooms in their produce department. If you don’t have access to wild mushrooms must use store bought fresh mushrooms.
Making risotto is very inexpensive and can be done in under 30minutes. Often risotto is expensive on many restaurant menus since you have to continuously stir (meaning a chef must stay with the risotto the whole-time cooking) and it has to be made fresh.
You can choose many different types of vegetables and proteins to add to your risotto. It’s guaranteed to be a on your favorites list once you’ve seen how simple it comes together!
Ingredients:
- 1 ½ cups Arborio rice
- 2 cups fresh mushrooms
- 6-8 dried wild mushrooms
- 6 cups chicken broth
- 1 finely chopped onion
- 6 cloves finely chopped garlic
- 4 tablespoons of butter
- 1/2 to ¾ cup grated parmesan or asiago cheese
