Nothing warms you up better on a cool day than a bowl of hearty pioneer soup! This is the type of soup where a recipe is just a “guideline”. I shared this recipe during the start of the COVID pandemic because I wanted to encourage people to look around the kitchen and use the ingredients you have rather than going out shopping.
I’m including a list of basic ingredients but anything you don’t have you can just make a substitution. When you watch the video, you’ll see what I mean.
This soup is freezes well and can be enjoyed all through the winter. We often freeze portions of soup in zip lock bags and just pull them out and heat a portion as needed. I encourage you to be creative and add the ingredients you like and omit the ones that are not your favorites.
Ingredients:
- 2 onions diced
- Can of black beans
- 1 cup barley (pearl or pot)
- 1-pound ground beef (chicken, pork, or turkey)
- 2 tablespoons of oil
- 1 can diced tomatoes
- 1 can tomato paste
- 1 tablespoon garlic powder
- Salt and pepper to taste
- 2 tablespoons of chilli powder
- 1 grated potato
- Mystery ingredients (any leftover you have in the fridge/freezer)
