One Pot Chicken Dinner

When your days get busy it is nice to be able to make a simple “one pot” dinner for your family. In this video I show a simple yet tasty recipe for chicken, rice, and vegetables all in one pot.

Choose the meat you have on hand, and the vegetables in your fridge. You cannot go wrong with this simple dish. I prefer a cast iron pot when cooking but you can use any pot with a lid that can go in the oven. Large families can you a big roasting pan and double or triple the recipe.

Cooking healthy doesn’t have to be time consuming. I hope you enjoy the delicious flavours!

Ingredients:

  • 1 cut up chicken
  • 4 large carrots
  • ½ head cauliflower
  • 1 onion chopped
  • 1 head of garlic
  • 1 cup Brussel sprouts
  • 1 cup basmati rice
  • 2 cups of chicken stock
  • Salt and pepper to taste
