Meatloaf and Roast Veggies

Zubak comfort food is meatloaf and roasted vegies. Both dishes can go into the oven at the same time and both can come out at the same time making this a perfect dish for a busy family. Prep can be done in the morning if it fits your schedule and remain in the fridge until you come home.

Like many of my recipes, feel free to substitute ingredients with what you have and what you prefer for taste. Leftover meatloaf can be sliced and used in sandwiches the next day. Enjoy!

Meatloaf:

  • 1 ½ pound ground beef (pork/chicken)
  • 1 cup breadcrumbs
  • ½ cup parmesan cheese
  • 1 cup pureed pumpkin
  • 1/3 cup ketchup
  • ½ cup milk
  • 2 eggs
  • salt and pepper to taste
  • 1 tablespoon of Italian seasoning

Roasted Veggies:

  • 4 cubed potatoes
  • 4 large carrots
  • 1 rutabaga or turnip
  • 1 large onion
  • 1 whole head of garlic
  • 2 tablespoons of oil
  • 2 tablespoons of balsamic vinegar
  • 1 tablespoon of Italian seasonings
  • Salt and pepper to tastes
